My Pancakes for Hot Summer Evenings

 The other evening I felt like cooking something for my family. However I am not the best cook in the world, so I made pancakes! Since it was really hot outside, I didn't want to fill ourselves with heavy sweet pancakes, so I decided to cook some spinach mixture, asparagus and spinach salad instead. If you want to make pancakes but you want to be healthier, then follow this recipe of my super easy light pancakes!


   



Ingredients:


Pancakes:
  •  Buckwheat flour and wheat flour (200g)
  • 2 eggs
  • 400 ml of milk
  • oil for frying

The spinach mixture:
  • The spinach 
  • an onion
  • a garlic
  • salt and pepper
  • oil for frying

The Aspargus:                  
  • the aspargus
  • water for cooking
  • salt









     The salad:
  •      spinach
  •     tomatoes
  •     radishes
  •     feta cheese
  •     olive oil
  •     balsamico

         



How I cooked it:

The whole preparation for my dinner took me about 45 minutes.
Firstly, I filled a pot with hot  salted water, added the washed asparagus and put it on the cooker. 



Then I mixed the ingredients for the pancakes in a bowl to create a very thin mixture, and put the oil on a pan and let it become hot. Then I put half a ladle of the mixture on the pan. I kept the same temperature during the whole frying.
I made all of the pancakes really thin, so I could wrap them around the spinach mixture.


While the first pancake was frying, I cut the onion and fried it on the oil on another pan, until it became brownish.


Then I added the fresh spinach, grated the garlic on it, added salt and pepper and stirred everything together.

During this process, I was looking after my pancakes, turning them over and frying more and more pancakes. I also had to look after the spinach mixture and stire it everytime, so it wouldn’t get burnt. 




I also put the washed spinach in a bowl, added every other ingredients and properly stirred the salad, the salad was done!

When the asparagus was cooked, I spilled the water out and put the asparagus in the oven, so it stayed warm. When the spinach mixture got smaller, because it lost most of the water, it was done. Then I also finished the puncakes. 

 VOILA!!!




These pancakes are very easy to make, since you do not need to know specific amounts of each ingredient. For example you can make the spinach mixture as garlic-like as you want, or you can put more feta cheese in the salad. The best thing about these is that they are not heavy, but they still fill you up. Also they are really healthy, so you can have a pudding! HEHE
